Description
Cicerchia is an ancient wild garbanzo-like legume, has been rediscovered for its nutritional value. Grown in Italy, known as Grass Pea, has tender hull and unique earthy flavor, taste like a pea crossed with a chickpea. It’s rich flavor enhance many dishes, soups and salads. High in fiber and proteins, recommended in low fat diets.
Basic preparation: Wash, rinse & soak overnight. Add 4 Cups of water Cup of Bean, bring to boil. Reduce heat and simmer covered for 60-90 minutes or until tender (add more water as needed). Flavor with butter or oil, salt to taste and any seasoning if desired. Cook uncovered over low heat until desired consistency.
